Can you eat healthy on a budget?

Healthy on a budget, save time and money!!

1) Lentils are around 99 Cents per pound and they are an excellent source of protein and low sugar carbohydrate.  Use them in salads, soups and even pastas!


2) Roast that chicken people!  It is far less expensive to purchase a whole chicken than to buy chicken breasts, thighs, legs and wings separately.  If you roast a chicken on a Sunday evening, you can use the leftover meat for sandwiches, soups, salads, pastas during your busy work week.  


3) Bananas are consistently the least expensive fruit to purchase.  Usually around 99 cents a pound.  Pack them in lunches; use them to make yogurt parfaits, smoothies, and even salads.  When they begin to turn brown, use them to make Christine’s healthy banana bread!!


4) Replace soda & juice with water and save, save, save!!


5) Replace packaged foods with fresh produce from your local farmers market.  Many growers offer specials on crops that have grown in abundance.  Example, this winter I purchased 2 pounds of oranges for a dollar!!

Slow Down, Tune In, Be Still . . . 

"Christmas can be a very hard time for people for many reasons. One reason is that Christmas doesn’t always live up to the hype. In fact, it rarely does. You can be very disappointed. A lot of people turn to alcohol and drugs, and suicide attempts go up at this time of year. 

Sometimes there is a deep sadness at Christmas because of family problems. Maybe your parents have divorced. Maybe your wife or husband has left you. Last year you were with them, and this year you are alone. Or maybe you have lost a loved one. They were with you last year, and they are not there this year. There is deep pain. 

While some are having fun at Christmas, others are in real pain. They need to know that the real message in all the celebrating is that God came to this earth and was born in a stable, and then He went to a cross and died for the sins of the world. That is the message we don’t want to lose. He was born to die so that we might live. He went to the cross, died, and rose again, and now He stands at the door of our lives and knocks. 

Let’s not celebrate the birthday of Jesus and not let Him into his own party. Let’s not say no to Him because we are so busy and have so much going on. Open the door of your life and invite Him in. 

Sometimes you may wonder where God is in your life. You wonder whether He has left you. No, He hasn’t. He is there. He is Emmanuel—God with us. In the hype of the season, let’s remember to just slow down, tune in, be still, and know that He is God."

Christmas matters for you  


It’s amazing, isn’t it, how much extra baggage has been piled onto the stories of Christmas? Singers can put out a “Christmas” album and never once mention the baby in the manger. Somehow you can make a whole season out of mistletoe, Yule logs, Frosty, Rudolph, and chestnuts roasting on an open fire. 

Santa Claus can’t do a thing for you because he’s just part of the myth. The only way that the “holiday” will be a holy day for you is if you center your thoughts on the incredible truth that the second person of the Trinity, God from God and Light from Light, thought enough of you to become fully human, just like you. 

Here is why Christmas matters: “Since the children have flesh and blood, he too shared in their humanity so that by his death he might destroy him who holds the power of death--that is, the devil--and free those who all their lives were held in slavery by their fear of death” (Hebrews 2:14,15). Imagine that. He needed a human body so it could be nailed to a cross. He needed human blood so it could be poured out as a sin offering for the world. For you. 

And it all started in Bethlehem. What can you say to that but “glory to God in the highest!”
