How about a dessert pizza for the Super Bowl.
Regular pizza crust-partially cooked
Add White chocolate chips on top of the crust
Add Mini Marshmellows on top of the chocolate
Add Coconut flakes to the top of the chocolate
Bake at 400 for 10 mins.
Cut and ENJOY!

ok, here is my recipe for the SuperBowl!

4 blocks cream cheese
1 lb. hot ground sausage (browned and drained)
(I use Jimmy Dean Hot Sausage)
1 can rotel tomatoes

Put in crockpot and heat till cheese is melted.  Stir often and serve with cornchips!
This is awesome!  I run out quickly and usually have to make more or double the recipe to begin with.

Super Bowl Cream Tacos

1 lb ground beef browned
1 can chili beans (Ranch Style)
1 can Rotel
1 can Chili with no beans
1 lb Velveeta cheese cubed
1 small carton whipping cream

After browning the meat, add rest of ingredients.  Cook on low heat until cheese is all melted. Be careful not to scorch.

To serve:  Put Nacho Cheese Doritos on plate, spoon cream taco mixture over chips.  Top with shredded cheese, onions, lettuce, tomatoes and salsa.

This recipe only takes about 20 minutes to make and feeds about 8 people.  Receipe can be doubled or tripled.....to feed more.  Great as a leftover.

Good morning! Just listening to KLOVE on my way to work from prayer group/coffee. Here's my offering for a Super Bowl party:
Stuffed Portabella Mushrooms
4 big mushrooms
1 lb sausage
Small bundle scallions, chopped
salt, pepper, garlic powder, any other spice of your choosing
Small to medium container sour cream

Fry up the sausage with spices and chopped scallions. Stir in sour cream. (Get creative, add anything else you want ~ jalepenos? avocados?)

Stuff the mushrooms with the mixture, broil or bake for about 10 minutes. Cut them with a pizza cutter into wedges, serve.

For Super Bowl I always make a HUGE pot of chili. I ask everyone coming to the game to bring their favorite chili side. I suggest Fritos, sour cream, peppers, cheese, avacados, chips....  The list goes on and since everyone brings something, I always have enough food. I make the chili the day before the game so on game day all I have to do is heat it and have fun with my friends!

My husband and son love Bacon Wrapped Water Chestnuts.
*Partially pan fry bacon strips - the strips need to be flexible enough to wrap around sliced water chestnuts.
Drain bacon on paper towel and when cool enough to handle cut bacon strips in half and wrap each half around a sliced water chesnut and secure with toothpick.
Put wrapped chestnuts in baking dish and pour your favorite BBQ sauce (we like Sweet Baby Ray's BBQ sauce)over all - enough to generously cover.
Bake uncovered in a 350 degree until bacon becomes crispy and sauce is hot and bubbly.(approx. 30 minutes)
When cool enough to handle eat and enjoy.
Note: be sure you make plenty because once you start to eat these it's hard to stop!

Must have for ANY special day!  Cook choice of mild or hot sauage, mash into small pieces and drain.  Melt a pkg. of Velveta cheese, and a drained can of Rotel (again mild or hot) peppers and stir together. Serve warm or hot.  It is sooooo good!!! Serve with tostilla chips.
I also make shrimp salad for most special days.
Boiled shrimp, mac-noodles,some mayo, pickle relish and a dash of mustard-of course you can add things like celery or onions if you like- but be SURE to put "some" celery SALT-that is the key to taste!  Chilled or fresh made, serve with any kind of cracker you like!

Everyone in my family loves it when I make Cheese Fondue:

2 c. dry white wine
1 tsp. cornstarch
2 garlic cloves
1/2 tsp. or so white pepper
2/3 lb. Gruyere cheese (no substitutions)
1/3 lb. or so Cheddar cheese
1 loaf French bread, cubed
1 firm apple, sliced
1 bunch grapes

Mix half the wine with the cornstarch in a heavy nonreactive pan and stir together until the cornstarch dissolves. Bring wine mixture to a simmer over low heat and add the cheese.

Slice the garlic cloves in half and add them to the mixture along with the pepper. Stir slowly as the cheese melts, always keeping the heat low enough so the mixture remains just below simmering.

When the cheese is completely melted and smooth, thin with the remaining wine (don't over thin) as necessary. The cheese should be thick enough to coat the bread and fruit.

Transfer to a fondue pot or serve in the cooking pot. Fish out and discard the four garlic halves. Place the fondue pot on a large platter.

Arrange the cubed bread, sliced apples and grapes around the fondue pot on the platter. Spear the bread cubes and fruit with forks or fondue spears and dip them in the fondue.

I LOVE Buffalo Chicken Dip for ANY get together. It's low carb & the ladies love that!  You can also make it low fat if you buy fat free/low fat ingredients. Even better!  If you like buffalo wings, this is a super easy way to serve a large crowd. I've taken this to everything from PTA luncheons to the neighborhood Bunco parties and everyone always asks for the recipe!

1 lb boneless, skinless chicken breasts
2 (8 ounce) packages cream cheese, softened
1 cup Ranch OR Blue Cheese dressing (I use blue cheese)
3/4 cup pepper sauce (such as Frank's Red Hot®, plus extra for cooking the chicken
1 1/2 cups shredded Cheddar cheese
1 bunch celery, cleaned and cut into 4 inch pieces
1 (8 ounce) box crackers

1.Rinse chicken and place in stock pot with water, add some Franks Red Hot Sauce, and bring to boil. Cover with a lid, reduce heat to Medium-High, and boil until done. About 10-15 mins. Remove chicken from water and let cool for about 5 minutes.

2. While the chicken is still warm, shred it using a fork or chop it in a food processor.

3. In a clean pan/pot place the shredded chicken and hot sauce and heat on medium until warm, add cream cheese & dressing. Cook, stirring until well blended and warm.

4. Add in half of the shredded cheddar cheese and stir until it's all melted and mixed in well.

5. Sprinkle the rest of the cheese on top, cover, and cook on Low until it's hot and bubbly.

6. Serve with celery sticks and crackers.

So this is not a recipe I have used for a superbowl, but found recently and have made a bunch my family thinks it is a true keeper. It is not only healthy but super yummy....

Mexican Bean and Rice Salad

2 cups cooked brown rice
1 (15 ounce) can kidney beans, rinsed and drained
1 (15 ounce) can black beans, rinsed and drained
1 (15.25 ounce) can whole kernel corn, drained
1 small onion, diced
1 green bell pepper, diced
2 jalapeno peppers, seeded and diced
1 lime, zested and juiced
1/4 cup chopped cilantro leaves
1 teaspoon minced garlic
1 1/2 teaspoons ground cumin or more to taste.
salt to taste

1.In a large salad bowl, combine the brown rice, kidney beans, black beans, corn, onion, green pepper, jalapeno peppers, lime zest and juice, cilantro, garlic, and cumin. Lightly toss all ingredients to mix well, and sprinkle with salt to taste.
2.Refrigerate salad for 1 hour, toss again, and serve.

* I have used one whole jalapeno and used my garlic chrusher chrushing the whole thing ( my son is not much for the spice so I minimize the impact to his mouth that way)
I have also found it is great to let sit over night. flavors meld better that way..  oh and i don't use can I take 3/4 c black and  kidney dry beans, soak then cook.... oh and I use frozen corn  I am not much for following recipes...

Oh and then serve with chips... Optional tomato avacado, lettuce, sour cream and you fave. hot sauce...

My favorite is cream cheese croissants!

With this recipe I honestly just add as much of each ingredient as I want!  But you at least need..

1 package of cream cheese
16 slices of cooked bacon- I just buy the precooked it's easier.
chopped onion (however much you desire but I wouldn't recommend a lot unless you just love onion!)
1 can of croissants
parm cheese if you want it!

I mix together the cream cheese, bacon, onions, and parm cheese.  Then, I unroll the corissants and cut them in half to make more of them and to make the bite size. Then, just put the mixture in them (as much as you please), wrap them up, and bake them according to the instructions on the croissant can!  They are honestly so simple and quick. Everyone loves them!

For a dessert...

I love to make deluxe brownies.
I just make a pan of brownies and after they have cooled I top them with marshmallow cream fluff, baking m&m's, heath bits, and drizzled caramel. They are so so good!

Oh, my recipe is super easy, and men really love it!

Just cut hot dogs into bite sized pieces, and wrap about 1/3 slice bacon around each piece.  You can secure with a toothpick if you want.  Place them in a shallow baking dish, and sprinkle on brown sugar, about a cup per package of hot dogs.  Bake at 350 until the bacon is cooked, usually less than 20 minutes.

Pepper Jack Chorizo Jalepeno Poppers

1 block of Pepper Jack Cheese
1 Pk Goya Chorizo
2-4 Jalepeno peppers cleaned and seeded
2 cans of Pillsbury Crescent Rolls
1 can Olive Oil Pam

I take the block of Pepper Jack and cut into small bite size pieces. Then I slice the chorizo into small bite size pieces. I dice the Jalepeno peppers.

I then take the crescent rolls and roll out the dough. I cut the triangles in half to make as many poppers as possible. I then take a bite size piece of cheese and chorizo lay it on one of the triangles and take a bit of the Jalepeno pepper and lay it on top of the cheese and chorizo.

I then wrap the dough around the ingredients and place on a baking sheet that has been sprayed with some PAM. I bake the rolls until they are brown and cheese has melted.

You can serve these with some melted velveeta cheese or your favorite salsa and sour cream. Smile

Hi Scott and Kelly,

My favorite Superbowl recipe is for chili dip. The best part is that you can make it to your fitness fancy. Either low fat or full flavor!

1. Take 2lb ground beef (cooked with some cumin powder in a skillet) and throw it in a crockpot.

2. Throw in 2 cans (or 4 fresh) diced tomatoes

3. Add two cans of beans. This can be two cans of black beans...or mix it up with 1 can black beans and 1 can kidney beans. I like using Bush's Black Beans for Chile as they come marinated in a bit of chili sauce.

4. Add spices to taste. I like to sprinkle the tip with garlic, cumin, crushed red pepper

5. Last, add some sort of tomato liquid base. Some add tomato sauce, I like to add a can of healthy choice tomato basil soup. They have been on sale recently and already have some basil and flavorings in it.

Leave in the crock pot 4 hours on high or 8 hours on low.

Tends to be much thicker than regular chili, Serve with cheese (either regular or 2% reduced fat) and crackers, chips or pita bread.

For the HOT and tasty, try a Jalapeno Cheese Roll!!!

1 Block Velveta Mexican Cheese
1 Block Cream Cheese
1 Can chopped Jalapenos
1 Can Chopped Black Olives

Saran wrap a cookie sheet and melt the velveta and spread it evenly over the saran wrap. Let it set in the freezer for 20 min. Then melt the Cream Cheese and mix in some Jalapenos and Black Olives to the Cream Cheese.  How hot you like it will decide how much Jalapenos and Jalepeno juice you decide to put in.  After mixing cream cheese, jalapenos and olives.  Spread them evenly onto the frozen Velveta cheese and roll it up like a log.  Can eat immediately, or set in fridge to let the juices settle throughout all the cheese. Good with Ritz crackers or any think else you desire.

Boil 2 cans sweetened condensed milk for four hours in a large stock pot. Remove the labels and don't open. You must keep the cans covered with a least a 2 tablespoons of water at all times. When you open the cans the milk has turned to caramel. Spread into a graham cracker crust and top with whip cream, pecans and mini chocolate chips. Don't let the cans cool completely. When you are done boiling them pour out the hot water and add cold water. You will be able to touch the cans after a few minutes. Open then to make spreading easier.

This isn’t a recipe but a football party concept your listeners might enjoy.  Way back 85 pounds ago I used to host a Rose Bowl Party titled 4 Quarters of Fried Food.  Literally, you serve a different deep fried food every quarter.  It’s been a few years but my recollection of the last one went something like this:

1st Quarter(appetizer 1) – Jalapeno poppers
2nd Quarter (appetizer 2) – hot wings
3rd Quarter (dinner) – garlic fries as a side dish to bratwursts and tri-tip sandwiches that were cooked on the grill. (not everything had to be fried just 1 thing every quarter)
4th Quarter (dessert) – funnel cakes

Fresno, CA
And how about a shout out for your Fresno listeners?

I'm with Kelli cause I don't like football but the recipe that I like when I get together with friends is Red Neck Tacos that my friend Tammy shared with me several years back.
You will need ground beef, Taco seasoning, Taco sauce, lettuce, tomatoes, grated cheese, sour cream, individual red bags of regular Doretoes (not the big bag)
Cook ground beef with Taco seasoning just like you would for regular Tacos.  Take a bag of Doretoes and crush the chips inside the bag.  Cut the top of the bag off and add Taco meat and any toppings that you like in the bag.  Enjoy with a fork right out of the bag.  This is great!

Homemade Stromboli
Raw pizza dough
Filling - Quantities will vary based on how many you are making(any combination of meat and cheese or cheese and veg, the flatter the better. See end of recipe for suggestions.)
1 Stick Butter
Garlic Powder
Parmesan Cheese

Rolling Pin
Foil wrapped cookie sheets sprayed with PAM

You take premade raw pizza dough (you can get this from a pizza palor or a supermarket or bakery) You roll it out like you are making a pizza pie. If you get this from the pizza place it will already be floured, but if needed dust your hand and rolling pin lightly with flour to prevent sticking. Do not flour your counter as it will make rolling the dough difficult.

Lay your filling out to cover the dough all but half an inch around. Fold over three edges of the dough that half inch so it overlaps the filling and press edges wherever dough meets dough. Take the center edge and start rolling it over the filling evenly like a long pinwheel, pinching the edges of the dough together as you go to create a seal on all sides. You will end up with a loaf of rolled dough and filling.

Melt the butter in the microwave and set to the side. Mix the spices together with the parmesan in a small bowl and set to the side.

Place the loaf on the sprayed cookie sheet a few inches from the edge of the pan. With your knife cut three air holes in the top to minimize a cheese blow-out as the filling expands.

Coat the outside with butter and then sprinkle the cheese and spice mixture on top.

Place in a 375 degree oven for 25 minutes or until golden brown.

Allow to cool then cut into half inch slices for serving. Rewrap uneaten portion and store in the refrigerator or freeze for later use.

Filling Combination Ideas
-Pepperoni and Mozzerella
-Four Cheese with Garlic (ricotta, with a little egg and parmesan mixed in, provolone and mozzerella)
-Spinach, Garlic and Mozzerella
-Broccoli and Cheddar
-Chopped Steak and Cheese of your choice
-Ground beef or sausage and mozzerella

2 Sticks of BUTTER
3/4 cup COCOA
2 cups SUGAR
1 tsp. VANILLA
1 cup all purpose FLOUR
1 cup semi-sweet CHOCOLATE CHIPS
1 cup chopped PECANS or WALNUTS (optional)

Preheat the oven to 350 degrees.
Grease bottom & sides of a 13x9 inch pan.

Melt the butter in a large microwave save bowl for approx. 2 minutes at full power.

Add the rest of the above ingredients, stirring after each addition. (I prefer the nuts sprinkled on top, rather than stirred into the batter.)

Spread in the 13x9 pan. (Batter will be thick.)
Bake for 25 minutes or until a toothpick comes out clean.

* I like to make these the night before a party. I cut them when they're cool. They set up overnight & take on a fudge-like consistency that I love! However, my family can never wait & insists on having one while they are still warm!

Well, we don't 'do' the Super-Bowl, but if we did I would make these, because they are a hit everywhere I take them!

Cookie Dough Brownies

2 cups sugar
1-1/2 cups flour
1/2 cup baking cocoa
1/2 teaspoon salt
1 cup vegetable oil
4 eggs
2 teaspoons vanilla extract

1/2 cup butter or margarine, softened
1/2 cup packed brown sugar
1/4 cup sugar
2 tablespoons milk
1 teaspoon vanilla extract
1 cup flour

1 cup semisweet chocolate chips (milk chocolate works too)
1 tablespoon shortening

In a mixing bowl, combine first four ingredients. Add next three ingredients; beat at medium speed for 3 minutes (I sometimes don't do it that long because it starts working the mixer too hard!). Pour into a greased 13x9x2 inch baking pan. Bake at 350* for 30 minutes or until brownies test done. Cool completely. For filling cream butter and sugars in a mixing bowl. Add milk and vanilla; mix well. Beat in flour. Spread over brownies; chill until firm. For glaze, melt chocolate chips and shortening in a saucepan, stirring until smooth. Spread over filling. Chill.

I like these at room temp and my daughter likes them cold, so take your pick! Smile

Here's a delicious, HEALTHY dish that can be served as a salad or (our preference) a dip. It makes a BIG bowl-- but it also freezes well, in case there's any leftover! Enjoy!

Southwestern Bean Salad Dip

1 can kidney beans
1 can black beans
1 can chick peas
1 cup frozen whole kernel corn, thawed
2 stalks celery, chopped
1 large red onion, chopped
1 medium tomato, chopped
3/4 cup mild salsa (thick & chunky)
1/2 cup vegetable oil
1/4 cup lime juice
1 1/2 teaspoon chili powder
1 teaspoon salt
1 teaspoon cumin

(Large veggies should be chopped to about the same size as beans. Also, beans and corn can be swapped out for whatever kinds you prefer/have on hand.)

Rinse and drain beans and chick peas and pour into a large bowl. Add rest of vegetables and blend lightly (so the beans don't get mushy). Set aside. In a smaller bowl, mix remaining ingredients (liquids and spices) well, then pour that over the veggie mixture. Stir to evenly coat all veggies.

Refrigerate to allow flavors to blend, at least 2 hours (overnight is best). Stir again just before serving. Serve with tortilla chips or corn chips (the "scoops" kind work best).

I love to cook, but of all the things I make this is the one that people always talk about. It is so easy! You will never understand how good it actually is until you take that first bite. Then...there's no going back! lol!

Symphony Brownies

1 box walnut brownie mix
3 large symphony bars with almonds & toffee

Prepare brownie mix according to box directions. Line a 13 x 9 pan with foil. Pour half of brownie mix in prepared pan and smooth out. Layer candy bars side by side on top of brownie mix. Finally, layer remaining brownie mix on top of candy bars. Bake in preheated 350 oven for about 30 minutes (or until done.) Lift foil out of pan to cut perfect brownies.

If you eat while warm, the candy bar is still gooey and delicious!

If you eat after cooling, the candy bar returns to original texture but is surrounded by brownies. Yum!

For an added treat, serve warm with French vanilla ice cream and raspberries!

I have 2 recipes for the super bowl.
Chicken Wing Dip
Rotisserie Chicken Shredded up (however much you prefer)
1 8oz. cream cheese
8 Tablespoons of butter
1/4 of a cup of Wing sauce (not hot sauce)
Blue Cheese crumbles
1/2 pkg of shredded mozzarella

Put the cream cheese and butter in a microwave safe bowl and heat for 1 min. or until they cream together. May take longer than a min depending on the microwave. Add your chicken and wing sauce. You may want more sauce depending on your liking. Place in an oven safe platter and add as much blue cheese as you would like. I just add a little bit. Then top with mozzarella and bake in a pre heated 350 degree oven until bubbly. Serve warm with chips or crackers.

Weird Queso

1 8 oz cream cheese
1 small tube of breakfast sausage
1 can of rotel tomatoes

Cook your sausage in a sauce pan on the stove on med high heat until brown. I make sure that there are no big chunks of sausage. Like you would have hamburger meat when you cook it. Add your cream cheese until melted and smooth then add rotel tomatoes. Heat through and serve. This is really good with the roasted vegeatable ritz crackers but can be served with chips or crackers.

Scott, I think my recipie may especially interest you. Since everyone seems to like Hot Wings and Chili, I combine the two amd make Buffalo Chicken Chili. Very good and goes along way.

1 tbsp e.v. olive oil
2 tbsp. butter
2 pounds ground chicken breast
1 large carrot, peeled and finely diced
3 stalks celery, diced
1 large onion, chopped
5 cloves garlic, chopped
5 tbsp chili powder
2 tbsp ground cumin
1 tbsp ground paprika
1/2 cup or more hot wing sauce
2 15 oz cans tomato sauce
1 15 oz can crushed tomatoes
1 15 oz can white kidney beans, drained
1 15 oz can red kidney beans, drained
salt and pepper to taste

Heat oil and butter in a large pot over med-high heat. Crumble in chicken and cook until no longer pink. Add veggies and spices and cook until onion is translucent and veggies begin to soften. Stir in remaining ingredients and simmer over medium-low heat for about one hour, until the veggies are tender and the flavors are well blended.
I serve with a side dish of bleu cheese crumbles to use as topping and tortilla chips. Cool Ranch Doritos also go well with it.

Southwestern Beef Wrap

1 8oz package of cream cheese (at room temp)
1 cup of your favorite salsa
1/2 cup of Cobly Jack and Montery Jack shredded cheese
( you can also add sliced black olives)
With a mixer beat cream cheese until smooth, then mix in your cheese. Than hand mix your cheese in and place in refrigerator until you are ready to make your wraps.

1 package of of tortilla shells (larger do work better)
1/2 lb deli roast beef sliced thin but not falling apart.
shredded lettuce--or if you want to get fancy use roman lettuce.
1 8 oz of shredded cheese any flavor will work.

Place 2 of your shells in the microwave and mic for 10 seconds just so they are a little warm for easier folding. Place 1-Tablespoon of sauce on each shell  followed by 2 slices of roast beef make sure most of the shell is covered with the roast beef.
Next place your lettuce then sprinkle with cheese. Rolling like a jelly roll. One done cut into 1 inch round slices and place on a serving try with extra sauce for dipping or for chips.

Depending on how thick you make them you can feed at least 6 or more people on this.

Easy Buffalo Wings

1 ½ cups (12 ounces) mild to medium hot sauce

½ cup buttermilk

½ teaspoon garlic powder

3 pounds chicken wings, separated into 2 pieces and wing tips discarded

4 tablespoons (½ stick) unsalted butter, melted

Blue cheese dressing (optional)

Celery sticks (optional)

Place 1 cup of the hot sauce, the buttermilk and garlic powder in a large resealable plastic bag and stir to combine. Add wings; seal bag, pressing out any excess air; and turn bag to coat wings evenly. Let marinate in refrigerator, turning occasionally, at least 2 hours or up to 12 hours.

Heat broiler to high and arrange a rack in middle of oven. Cover a baking sheet with aluminum foil and place a wire rack on it.

Remove wings from marinade, letting any excess drip off, and arrange in a single layer on the rack. (If possible, don't allow wings to touch.) Discard marinade and broil wings until meat starts to pull away from bones and skin is deep golden brown, bubbling and crisped, about 12 to 15 minutes. Remove from oven and turn wings over, using tongs. Return wings to the oven and continue broiling until skin is deep golden brown, bubbling and crisped on the second side, about 12 to 15 minutes more.

Meanwhile, combine remaining ½ cup hot sauce and melted butter in a large bowl and set aside. Add cooked wings and toss to coat. Serve immediately with blue cheese dressing and celery sticks, if using.

I noticed that someone else already submitted a similar recipe, but this one is worth repeating! One of our friends from our church small group introduced us to "3-2-1 Dip" several years ago and it has been a staple for every party ever since. Amongst our group, we refer to it as "crack dip" because it's so addictive. Smile

3--8 oz. bars of cream cheese (the light kind works too!)
2--cans of Rotel (spicy if you want!)
1--pound of ground sausage.

Brown the meat and drain, and then mix it all together in the crock pot and you're done! For a vegetarian or healthier option, we've substituted a pound of mushrooms for the sausage and it's still great!

Here's my oft-requested Spinach & Artichoke Dip.

Baked Artichoke and Spinach Dip

•  1 can artichoke hearts, drained  (quartered work the best) & chopped to desired size
•  1 package (10 oz.) frozen spinach, thawed (if in a hurry, heat for 3 minutes in microwave)
•  1 (8-oz.) package cream cheese, room temperature
• ¼ cup butter or margarine
•  ½ cup mayonnaise or salad dressing
•  ½ cup milk
•  1 ½ tsp. seasoned salt
•  1 tsp. minced garlic and/or ½ tsp. garlic powder
•  ½ tsp. pepper
•  1 cup shredded mozzarella cheese (divided)
•  ½ cup grated parmesan cheese
•  ½ cup shredded cheddar cheese, optional

Drain spinach in colander by pressing and squeezing to remove water.  In microwave-safe dish, heat cream cheese and butter 1 minute.  Stir to blend.  Add mayonnaise and milk and blend well.  Stir in spinach. Add artichokes and beat to blend.  Add salt, pepper, garlic, ½ of mozzarella cheese, and cheddar cheese (if using); beat till mixed well.  Spread in shallow baking dish (13 x 9” or a bit smaller).  Sprinkle parmesan cheese over mixture followed by other half of mozzarella.  Bake at 375 degrees for 30-40 minutes or until golden brown and bubbly.  Serve with tortilla chips, bagel chips, or crackers.

Or for another winner:  Buffalo Chicken Soup.

Buffalo Chicken Soup

•  1 2 ¼ to 2 ½ lb. deli-roasted chicken, skinned, boned, and coarsely shredded or
•  2 lb. chicken leg quarters, and/or boneless skinless breast, cooked and shredded (about 1 ½ cups)*
•  3 Tbsp. butter
•  ½ cup coarsely chopped celery
•  ½ cup chopped onion
•  1/2 cup uncooked noodles
•  4 cups water w/3 chicken boullion cubes
•  1 tsp. - ? (however hot you want it) bottled hot pepper sauce
•  1 tsp. chives
•  1 tsp. parsley
•  1 tsp. dill
•  1 ½ tsp. garlic powder
•  2 cups milk (any variety; 2 cans of evaporated milk works well, too)
•  1 ½ cups mozzarella cheese
•  1 ¼ cups crumbled blue cheese or 1 ½ cups shredded cheddar cheese
•  ¼ - ½ cup swiss cheese, optional
•  4 Tbsp. cornstarch dissolved in ¼ cup cold water

1.  Melt butter over medium heat in 4-quart Dutch oven or pot.  Add celery and onion; cook and stir until onion is tender.
2.  Add water w/bouillon and noodles.  Bring to boil and cook for 8-10 minutes or until noodles are cooked.
3.  Add cornstarch mixture and bring to a boil.  Boil and stir for 2 minutes.
4.  Add hot sauce, chives, parsley, dill, garlic powder, and chicken to mixture. If mixture still seems thin, add another batch of cornstarch mix.
5.  Stir in milk.
6.  Gradually add cheese, stirring frequently until melted.  Heat through.
7.  Tranfer to crock pot and heat on warm or low setting.  Serve with extra hot sauce, as desired.

* Chicken can be cooked in microwave (should take approx. 15 min. for 2 lbs.—leave skin on if applicable and season as desired (salt, pepper, garlic powder—what I use)).

I am always looking for the best recipes and people are always requesting mine! This receipe was given to me by a family member and has become the number 1 requested recipe I have given out to my family and friends... Due to how EASY it is to make (my kids even help me), how many it can feed (I usually double or triple it since they seem to be gobbled up in an instant), and because they are just absolutely DELICIOUS... they have become a "must have" for every party and get-together!! Even your children will love them... A great recipe to get them to eat their veggies!! ENJOY!!

Cheese Stuffed Mushrooms

1 1/2 pounds white button mushrooms
1 cup shredded Cheddar Cheese
1 cup shredded Mozz cheese
1 cup shredded (or grated) parmesean cheese
3/4 cup mayonnaise
Crumbled, cooked bacon to taste (about 1/3-1/2 pkg)

Heat oven to 375 degrees. Wash/dry mushrooms and remove stems; hollow out a hole where the stem used to be. In a bowl, mix together cheeses, mayo and bacon. Fill hollowed mushrooms with a generous amount of cheese mixture. Arrange mushrooms on a lightly greased cookie sheet. Bake until cheese is lightly browned and mushrooms are shiny (about 20 minutes). Can even be made in advance and refrigerated... just bake right before serving!

You and your guests will be going back for seconds!!! Smile

This is an excellent recipe. This is the most wanted recipe at all our holiday gatherings. Brought to a Super Bowl Party last year--It was a HIT!!!

Cheese Fondue

1-Round Loaf  - hollowed out (cut up bread hollowed out for dipping also)
1-Round Loaf cut up for dipping.

2 cups shredded Sharp Cheddar Cheese (I use 1 ½ Cups Cheddar Cheese and ½ Cup Monterey Jack Pepper Cheese).  DO NOT USE CABOT CHEDDAR CHEESE
1 8 oz. Cream Cheese, softened
1 16 oz. container Sour Cream
½ cup chopped onion
1 cup diced ham (use one packaged thick ham slice or pre-diced ham)
1 tsp. Worcestershire sauce

--Combine cheddar cheese and cream cheese in bowl.  Add remaining ingredients.  Pour into the hollowed out bread loaf.

--Wrap filled loaf completely in regular aluminum foil 3 times and place on a cookie sheet.  Bake at 350° for 1 ¼ - 1 ½ hours.

--Meanwhile, cut up extra bread loaf and bread hollowed out from round loaf into 1 ½” cubes.

--When dip is done baking, remove foil from top of bread loaf (leave rest of loaf in foil – helps keep dip warm).  Stir and serve with bread cubes to dip.

I didn't post my recipe before, just my email address.  Here is the recipe for my chili, both with and with meat versions.

Jill’s Amazing Chili (Meat Version)

2 lbs. ground beef
1 medium onion, chopped
1 green pepper, chopped
3 stalks celery, sliced thinly
2-3 jalapeño peppers, minced*
3-4 cloves garlic, crushed
1 15-ounce can dark red kidney beans
1 15-ounce can light red kidney/pinto beans
1 15-ounce can black beans
1 15-ounce can cannellini or great northern beans
1 can beef broth (or 2 beef bouillon cubes + 2 cups boiling water/V8 juice)
1 16-ounce jar medium or hot salsa
3 15-ounce cans diced tomatoes
2 small cans chopped green chilies
2 cups spaghetti sauce (any all-veggie kind OK)
2 pouches taco seasoning (any brand OK)
2 pouches Sazón Goya (any type is OK)
1 tsp. sugar
½ tsp. baking soda
1 tsp. each of these dried spices: basil, oregano, cumin, chili powder, and 2-3 bay leaves

Brown meat and next 5 items in a skillet.  While meat is cooking, put beans in a large strainer or colander and rinse thoroughly.  When fully browned, drain meat mixture very thoroughly.  In 6-quart Crockpot or large dutch oven, put meat mixture, rinsed beans, and everything else.  (Before adding dried spices, rub them in your hands to crumble them up and release flavor.  The spices stay in, but take the bay leaves out before eating.)  Heat in Crockpot on high for about an hour, then on low for at least 6 hours.

If making on stove, heat to simmer on medium heat, then simmer slowly on low heat for at least 6 hours.  Stir periodically to mix things up a bit.  Season to taste.

Serve with shredded cheese and cornbread.

*I strongly advise that you wear latex gloves while handling jalapeños!
Can also use cooked, shredded beef instead of ground beef.

3 15-ounce cans diced tomatoes
2 small cans chopped green chilies
2 pouches vegetarian taco seasoning (any brand OK)
1 tsp. each of these dried spices: basil, oregano, cumin, chili powder, and 2-3 bay leaves

The Ultimate.
More of a meal than a snack.
A large serving tray full of them goes quickly.

1.) Make your own sauce.  Start with your favorite barbeque sauce and in a mixing bowl combine it with 1/2 cup soy sauce and 1/2 cup honey.  Once mixed, pour back in the bottle and save the rest for basting.

2.) chop a panfull of mushrooms and slowly saute in butter.

3.) Pan Fry pepper bacon and cut in 1/2 once done

4.) Get your grill Fired Up!!  Baste whole chicken breasts with your sauce. ( boneless / skinless )cook them over low grill heat turning and basting often. Adjacent to that, place pineapple rings on the grill to warm. ( Turn often to keep from burning )  When the chicken is done, cover with your sauted mushrooms, pepper bacon pieces, and your favorite cheese to melt down over the top.  Before serving, top the cheese with pineapple rings and dont forget the bottle of sauce just made.

SideLine Sausage Puffs

So, so easy. When these bake up, they resemble a small football.

1 8oz pkg. Cream Cheese
1 pkg. Jimmy Dean Sausage (any flavor)
2 Pillsbury Regular Croissant rolls

Heat oven to 375

Crumble and brown sausage in skillet, remove skillet from stove drain grease

Fold in cream cheese with sausage in skillet

Place one croissant on a greased cookie sheet, press down flat and place a tablespoon of the sausage/cheese mixture onto the middle of the croissant. Roll the croissant around the mixture and pinch the ends to seal the mixture inside the croissant.

Continue this process, with the remaining croissants. (When these bake up, they resemble a little football.)

Bake until lightly brown. About 10 minutes.

At our parties, I serve them right from the oven, on the cookie sheet. They are soooooo awesome.

1 cup small salad shrimp
1-2 T Louisiana style hot sauce
1 T olive oil, optional

While you prepare all the vegetables, pour the hot sauce on the shrimp and let it stand. Combine all the ingredients, and add salt to your taste. Add the olive oil if you like.
Get a bag of good scooping Tortilla chips, and get out of the way, because you will get trampled on by your guests. This is that good! Enjoy!

Venison Bites

Venison Backstrap
Whole Jalepeno Peppers (Trappeys Brand)
Philadelphia Cream Cheese

- Using a meat slicer, slice the backstrap in thin slices approximately 1/16" - 1/8" thick.
- Cut a small slice of cream cheese approximately 3/8" wide x 1/4" thick.
- Take the jalepeno peppers and cut them in half length ways.  Remove the seeds and then proceed to cut the two halves in half making 4 pieces.
- With the backstrap laying flat on a cutting board, place a piece of cream cheese and one or two pieces of jalepeno pepper and roll the cream cheese and jalepenos in the backstrap.
- Next, take a piece of bacon and cut it in half.
- Wrap the backstrap with the piece of bacon and use a toothpick to hold it together.
- Bake in a 350 degree oven for about 20-25 minutes.  Keep an eye on the cream cheese so that it doesn't completely ooze out of the meat.

ok, here are some wings that I found in a cook book... I hope that's ok but they are the best by far I've ever made.

12 whole chicken wings (about 2-1/2 pounds)
1 bottle (8 ounces) Italian salad dressing
1/2 to 3/4 cup hot pepper sauce
1/8 to 1/2 teaspoon cayenne pepper
2 tablespoons butter, melted

Cut chicken wings into three sections; discard wing tips. In a bowl, combine salad dressing, pepper sauce and cayenne. Remove 1/2 cup for basting; cover and refrigerate. Place remaining sauce in a large resealable plastic bag; add chicken and turn to coat. Cover and refrigerate overnight.
Discard marinade. Grill wings, covered, over medium heat for 12-16 minutes, turning occasionally. Add butter to the reserved sauce; brush over wings. Grill, uncovered, 8-10 minutes longer or until juices run clear, basting and turning several times. Yield: 6-8 servings.

Must have Superbowl Food! Here it is:

Bacon Wrapped Bratwurst Bites

4 bratwurst
3 (12 ounce) cans light beer (or you can just use water. Good either way.
5 tablespoons brown sugar
1 teaspoon cayenne pepper (add cayenne to taste)
6 slices bacon, cut in half

Poke bratwurst several times with a small fork, and place into a saucepan with the beer or water. Bring to a boil over high heat, then reduce heat to medium, and simmer for 15 minutes. Remove the bratwurst and allow to cool to room temperature.
Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil, and place a wire rack on top. This is a must! It will drip while cooking. Foil makes for very easy clean up!
Toss the brown sugar and cayenne pepper together in a large bowl and set aside. Cut each bratwurst into three pieces, wrap each piece with half strip of bacon, and secure with a toothpick. Toss the bratwurst with the cayenne mixture to coat, then place onto the prepared baking sheet.
Bake in preheated oven until the bacon is brown and crisp, 25 to 35 minutes.

Chicken Salad, Yummy!

Tyson’s chicken in a can

Garlic Powder
Adobo all purpose seasoning

Drain the chicken and place in a bowl.  With a fork or potatoes masher, smash up the chicken to break apart.  Add a couple of spoons of mayo until you get the consistency that you like.  Chop up and add your celery, tomato, and onions.  Add just a squirt of mustard and mix.  Now you can add your seasonings.  You can find the Adobo (Goya) all purpose seasoning in the Spanish sections of your grocery store.  Add in your salt, pepper, and garlic powder to taste. Mix all together.  And serve with crackers or toast some bread and make mini sandwiches.  I have made this chicken salad for my church… Urban Rock in Chicago… and they absolutely love it!!  I hope you do too!  GBURG!!!!  (God Bless You Real Good!)

I bring this to a lot of socials, etc and always have requests for the recipe and it's sooo easy and delicious!! I sometimes make a pan without the ham for my vegetarian friends.

Ham n Cheese Rolls

Two packages of party sized rolls in foil pan.
Large package of sliced ham or deli ham
2 pkgs of sliced swiss cheese

Slice party rolls in half and put layer of ham and cheese inside rolls in the foil pan. After I put in the ham and cheese, I cut to separate the rolls to make for easier serving later--they cut better when cold.

Sauce: (Measurements don't have to be exact)

2 sticks of butter
6 Tbsp onion flakes
2 tsp poppy seeds
2-3 Tbsp mustard
2 tsp worcestershire sauce

Put all sauce ingredients in a sauce pan and heat over medium heat until butter melts and it starts getting bubbly. Spoon/pour sauce over ham and cheese rolls. Cover the pans with foil and bake on center rack until cheese melts at 350 degrees. Takes about 15 minutes. Enjoy!!

Here's my dessert.  Be ready to snooze after this one!

Chocolate Decadence

    * 1 (18.25 ounce) package devil's food cake  mix
    * 1/2 (14 ounce) can sweetened condensed milk
    * 6 ounces caramel ice cream topping
    * 3 (1.4 ounce) bars chocolate covered toffee, chopped
    * 1 (8 ounce) container frozen whipped topping, thawed

   1. Bake cake according to package directions for a 9x13 inch pan; cool on wire rack for 5 minutes. Make slits across the top of the cake, making sure not to go through to the bottom.
   2. In a saucepan over low heat, combine sweetened condensed milk and caramel topping, stirring until smooth and blended. Slowly pour the warm topping mixture over the top of the warm cake, letting it sink into the slits; then sprinkle the crushed chocolate toffee bars liberally across the entire cake while still warm. (Hint: I crush my candy bars into small chunks as opposed to crumbs - I like to have pieces I can chew on!)
   3. Let cake cool completely, then top with whipped topping. Decorate the top of the cake with some more chocolate toffee bar chunks and swirls of caramel topping. Refrigerate and serve right from the pan!

Caramel Puffcorn

1 bag Old Dutch Puffcorn
1/2 lb butter
1 cup brown sugar
1/2 cup light corn syrup
1 teaspoon baking soda

Preheat the oven to 250
Combine butter, brown sugar and corn syrup in a sauce pan.  Cook 2 minutes and add the baking soda.Pour this mixture onto the puffcorn (it's easiest to use one of those disposable aluminum roaster pans)and stir until mixed. Place the pan in the oven for 45 minutes, stirring at least every 10-15 minutes. Serve this stuff right away...it's best when it's warm!

Bun Bars

4 cups chocolate chips
4 cups butterscotch chips
3 cups peanut butter
1 jar dry roasted peanuts
1 cup butter
1/2 cup milk
1 package instant vanilla pudding mix
2 lb powdered sugar (yep, you read that right!)

Melt the chips and peanut butter.  Spread 1/2 of this mixture into a 12x18 glass pan and chill 30 minutes.  Combine butter, milk, and pudding.  Boil 1 minutes and add the powdered sugar.  Spread this mixture over the chilled chocolate base.  Top it all off with the second 1/2 of the chocolate mixture.  Add peanuts to the top and chill for another 30 minutes to 1 hour until completely hardened.

**it's best to cut these into small squares lest you send any friends into some sort of sugar shock ;)

I make a yummy nacho recipe using Cheddar Cheese soup (there's that "cheese" debate again), cooked mild pork sausage (the kind you slice into patties for breakfast) and Rotel diced tomatos with chilis (drain them).  It's AWESOME and soooo easy.  Put it in a little crock pot or fondue pot to keep it warm and PROVIDE A SPOON! hahaha

i have two simple recipes.

Fast Beniet (no i didn't spell it right)

one can of frozen biscuits
cooking oil
powdered sugar

put oil in a tall pot. about an inch to an inch and a half will do, enough to cover the beniets. turn the stove on high, and let the oil heat up. when it's hot, turn it to medium. make sure the biscuits are soft enough to cut, no completely frozen. cut each one into four pieces, and drop them into the oil. when they are golden brown not burnt, take them out of the oil and toss them in powdered sugar. do this for each piece. then serve!

Seafood Dip

worcheshire sauce
tabasco sauce

get a small bowl and fill it a forth to halfway full with ketchup, however much you need by how many people are there. cover the ketchup with worcheshire sauce till you can't see much of the ketchup. stir. add a few drops of tabasco. stir. this is good for almost any seafood, especially shrimp and fish.

Jalapeno peppers stuffed with cream cheese and wrapped in bacon.  Blanch jalapeno peppers (I remove the seeds and membranes for me and leave them in for my husband.  To make sure I don't get one of his mouth burners I take the stems off of his so we can tell them apart); stuff with cream cheese; wrap with 1/2 piece of bacon; use a toothpick to keep the bacon in place; bake at 350 until heated through (about 20-30 minutes); broil, watching until bacon is cooked how you like it.
