Cornbread Dressing from Food Writer Scott Hutcheson

Cornbread Dressing

6 cups crumbled dried cornbread

3 cups crumbled dried white crumbs

1-1/2 stick unsalted butter

2 cups chopped yellow onion

2 cups chopped celery

2 tablespoon dried sage

1-1/2 teaspoons dried thyme

1 teaspoon dried rosemary

3 to 4 cups low-salt chicken broth

Kosher salt and ground black pepper to taste

¼ cup fresh parsley, chopped

2 eggs, lightly beaten


Two days before you are ready to assemble the dressing, spread out the crumbled cornbread and white bread on baking sheets, cover with clean dishtowels and store in a cool dry place where they can dry. When ready to prepare, preheat oven to 375 degrees. In a large mixing bowl combine the dried cornbread and white bread crumbs. In a sauté pan, over medium heat, sauté the onion and celery in the stick of butter until tender but not brown. During the last few minutes of sautéing, add the dried herbs (sage, thyme, and rosemary). Mix the herbed vegetables into the bread mixture and then add chicken broth until well moistened. Add salt and pepper to taste. Mix in the fresh parsley and beaten eggs. Spread the mixture in 9x13 baking pan. Cut the remaining ½ stick of butter into small cubes and dot the top with them.  Bake for 30 to 40 minutes. This can be assembled a day ahead, covered and refrigerated. If cooking after having been chilled, add another 10 minutes to the cooking time. Serves about eight.

The Pieces Fit ... Stephanie's Story

Here is my awesome WOW story in which GOD truly spoke to me about my marriage. This happened about a year ago:

My husband and I were going through a very rough moment in our marriage. He hurt me in a way that I never expected, and I was questioning our future. So much that I had him go stay at his brothers so I could get my thoughts together. I have always believed in God, but am closer to him now more than ever, thanks to my church. So I decided to give it to God. (Which is a new concept for me, I tend to try to control everything myself and be strong willed) But I realized this was much bigger than I could handle on my own, so I gave up control of the situation and just prayed and waited.

On Saturday I went to church at 5:15 at Toledo campus, and it was a service in which each person was given a piece of a puzzle, which related to the message that week. (Which, by the way, spoke to me immensely). Well my husband, decided to go on Sunday to the Perrysburg campus at 10:45.

Sunday afternoon, he came home briefly to cut the grass, and to talk. I had set my puzzle piece on my dresser. In passing by my room later that day, I noticed another puzzle piece attached to mine. It fit together!! I was so shocked! I must have stared at it for about a half hour in amazement. It turns out it was his piece that he had gotten from the service he went to.

Later, during one of our many discussions, I asked him about it. We were both in such awe! I told him that was definitely a sign from God that spoke so loudly, that we just "fit" together and we would be OK. I've held on to that through all of this and we are taking the steps to building our marriage stronger than ever now. It is still a daily battle, but I have forgiven him, and now it is framed in our house as a constant reminder to our covenant to each other, what God promised us! (That if we lean on Him, and if it is HIS will, all will work out for the better, in HIS time)

I was later told that they had purchased 3 of the same puzzle. totaling 4,500 pieces!! We had gone to two separate service on two different days, two different times and two different campuses. What are the odds?

Stephanie would later share with us that even though they've had some ups and downs the past year, God has done some incredible things in their lives and marriage - including blessing them with them a baby girl in the past couple of weeks, Alayna Grace .
