Food Literacy Center: Working With Public Schools To Educate Kids About Eating Healthy

(K-LOVE's Positive People - by Billie Branham) - Children at risk of developing obesity or Type 2 diabetes are learning healthy eating habits through the Food Literacy Center in Sacramento, California.

The Center's founder Amber Stott says, “It’s critical that we reach kids at a very early age before they develop bad habits to help them develop good ones.” 

The full interview:

“We come into schools where kids have never seen foods like broccoli or pears before. Within a few weeks, they’re eating everything from rainbow carrots to watermelon radishes to cactus and it’s really wonderful to see them turn into food adventurers.”

After going through the cooking class, Amber sees a positive change in students, who sometimes don’t have access to enough nutritious foods. “Eating those healthy fruits and vegetables that means that they can better focus in class, they can have more success in school, and simply sets them up for a healthier future.”
